This is a simple sourdough whole wheat bread. Just start to make the sourdough the day before you want to bake the bread. Mix loosely the sourdough ingredients in a small bowl with tepid water, cover it (but let it breathe). Set aside to rise on room temperature for 12 hours. You will get a very taste sour-smelling dough.
After rising the sourdough add the remaining flour, salt and water, knead the dough, cover and let it rise again 4 hours. After 2 hours knock it back once. On a floured surface board form a bread loaf place on baking paper covered sheet and let it rise again 20 minutes. Cut it and grease with cold water and bake in preheated oven on 200 C degree for 40 minutes. Once you put into the oven the dough place 2 dl water in a heat-resistant glass at the bottom of the oven. It will ensure the crispy crust.
