Gingerbred is a classic Christmas cookie, this is a traditional Hungarian recipe where the gingerbread cake is glazed with crispy sugar icing. First melt the honey and butter in a medium sized pan and set aside to cool preventing cook the eggs. When you use it should be tepid. Sift the flour, cocoa, salt, soda, and spices in a bowl, and mix with melted honey-butter and eggs, finally add the lemon juice and sour cream. Knead well, you can use a blender. Wrap the dough in a plastic bag or foil and rest it in a cool place or refrigerator at least for an hour or more. Preheat the oven to 200 C degree and cover a baking sheet with parchment paper. Form walnut sized balls with your hand and bake them until 10-15 minutes or the cake is light browned. The gingerbread cookies will be doubled in size.

While the cookies are baking, beat the egg white with a blender and mix with icing sugar. You will get a soft foamy sugar cream. When the gingerbread is cooked, stream into a big bowl and mold the egg-white sugar icing on them. Mix well, carefully with a kitchen spoon meanwhile shake the bowl as well. Place back the gingerbread cookies on baking sheet (no need to be neatly arrabged) and cook them in the oven for 5 minutes to solidify the sugar glaze. Reduce the heat to 160 C degree, no nead to bake it only dry. Let it cool down and store in cake box or plastic bag. Perfect for Christmas gift as well.
