Spaghetti with tomato sauce is always the favorite food for kids and with this meatball you can smuggle a little protein to their menu. This meatball contains only few ingredients however the sauce a little bit difficult. If you do not have so much time just cook a smart tomato sause from tomato juice, onion and dried oregano and thyme. So preparing the meatball just add the ingredients and blend well with your hands. The onion and garlic needs to be very finely chopped. You can add a 0.5 dl water if the mixture is too dry. Shape into round balls and place on a baking sheet and bake at high heat (180 C degree) for 10 minutes and at reduced heat more 10-15 minutes, watching carefully so they don't burn. When they have a nice brown crust, turn them over and brown on the other side and bake it more 10-15 minutes. Drain off the grease and add the meatballs to the sauce.
This is a rich sauce that needs several hours of slow cooking to develop its flavors. You can make it in a huge batch as you'll see from the list of ingredients and freeze it for later meals. Add the olive oil to the pot. Finely mince the onion and garlic in a food processor and saute in the olive oil. Do the same with the carrot and celery. Cook the vegetables until softened. Add the remaining ingredients and cook the sauce at least 2 hours hour stirring periodically. Add the meatballs to the tomato sauce and cook everything together for on a low flame for 5 minutes. If you want to make more enriched sauce you can add crusted sausage at the begining with onions. Cook the spaghetti al-dente and serve with sause and some meat balls. Garnish with parmiggiano and if you like chili flake.
