This is a great salad when watermelon is in season. First you may think the salt flavor and onion not suit to watermelon but feel free to try you will enjoy. I mesured watermelon with ice cream spoon, so if you prefer make 6 balls per person. Than add the finely chopped red onion, the sliced or crumbled cheese. During this time toast the sunflower seeds in a small frying pan for 3-5 minutes. You can change the sunflower seeds to any other like pine nuts, almonds or pistachios. Finally sprinkle the salad with vinegar and olive oil and put into refrigerator for 15 minutes.
