Pane di granturco is a tipycal south Italian corn or maize bread. This is not a polenta recipe as made with yeast and half amount of all purpose flour. First mix the wheat flour with corn flour and add the salt also. Than take a tepid water and mix with yeast and sugar, set aside for 5 minutes. In a medium size bowl knead a bread dough from flour, yeast mix and olive oil. Cover the bowl with a cloth and Let it rise in a warm place approx. 40 minutes. Than flour a board and form a loaf, cover with a cloth and let it rise again 25 minutes. Than place on baking paper covered frying pan, cut the top of the loaf. Grease the top of the loaf with clear water before baking. Put in the preheated oven and bake it on 180 C degree for 45 minutes.
