Method

This is a cheep and simple skillet dinner idea, you may use any leftover meats from weekend and substitute the ham. Peel, cut into cubes the potato and boil it in salted water, drain it. In a large skillet, heat oil over medium-high heat. Slice the onion, apple and meat (ham). Cook onion, stirring occasionally, until softened and golden brown, approximately 10 minutes. Add ham and potatoes, and cook for 5 minutes. Add apple and cook on high heat until it is tender, approximately 7 minutes. Add thyme, salt and pepper. Cook until potatoes are crispy and apples are tender, approximately 5 minutes. Serve hot with your favorite drink and some pickles.
