This salad of peppery arugula, crisp apples and vinegar is perfect for spring and as pretty as it is delicious! Clean and drain the aragula, slice the apple. Before serving sprinkle with balsamic vinegar and toss in a medium glass bowl. Strew the top with grated Parmesan cheese and serve with fresh bread. Season to taste with salt and pepper.
