Stuffed cabbage cooked with sauerkraut and smoked pork

Cabbage leaves wrapped around a meaty filling and baked in a juicy sauce are a common item on tables throughout Eastern Europe especially in winter season.

There are many customs of using different spicies, meats and cabbage. This excellent Hungarian version seasons the stuffed cabbage rolls with Hungarian sweet paprika and simmers them on a bed of flavorful sauerkraut and smoked pork ribs. Honestly making the stuffed cabbage rolls is really time consuming activity but it worth. As you can follow video guide and recipe we used to make from 3-4 kg meat and at least 2 cabbage heads receiving 60 rolls at the end. This stuffed cabbage dish becomes more tasteful by warm-up, otherwise we used to store frozen the surplus. As stuffed cabbage rolls are traditional food in Hungarian cuisine we used to serve Christmas, New Years eve and Wedding party at midnight. Traditionally made with pork chops, fat and rice or pearl bearly but you can use beef or turkey as well. Important to mention that always add enough grease to the filling otherwise it could be tough. Second tip: don't roll and fill tight the cabbage rolls otherwise it cracks but place them close toghether in the pot.
