This is traditional delicious dinner roll recipe which is filled with apricot jam, however you vócan use any other type of jam. They are so easy and fluffy, looks beautifully. Warm the milk to tepid and add a peck of sugar and yeast, set aside for 5 minutes. Melt the butter in a microwave safe bowl, for about 30 seconds. Cutting the butter into pieces helps it melt faster. There will probably be some little cubes of butter still floating in the hot mixture, they will melt. Stir the flour in a large bowl, add the milk mixture, the melted butter, sugar and egg and a peck of salt. Using a wooden spoon, or blender gradually knead the dough. At the end the dough will be dense and sticky, and may be hard to stir, you can use your hands to incorporate the rest of the flour if needed. Add more milk if needs. Be sure not to add too much flour. Then smooth the dough out and cover the bowl with plastic wrap. Leave it in a warm place and let it rise for 45 minutes. Let the dough raise until it has doubled in size. Cover your working space with flour to prevent the dough from sticking. Roll out the dough approx 1 cm thin and cut equal size rectangles (10 cm x 7 cm). Place 1 teaspoon apricot jam in the middle of all rectangles and fold the edges. Cover a baking sheet with parchment paper and place the rolls with folded side down. Let 2 cm gap between the rolls, they will rise in the oven. Preheat the oven to 180 C degree. Grease the top of the rolls with tepid milk and cook until golden browned approx 30-40 minutes. Once you remove from the oven, immediately grease the rolls with milk or melted butter again giving a delicious glaze. Serve warm and fresh, strew with icing sugar because the dough is moderately sweet.
