Frittata is very soft because of added feta cheese, this food is perfect either for breakfast or dinner. Beat eggs, salt and pepper until light and fluffy. Slice the onion and start toasting in a middle size frying pan. Cut the tomato and feta cheese and after 3-5 minutes frying the onion, add the tomato, cheese and finally the eggs. Don't stir the mixture! Remove the pan-handle, just put into oven on 160 degree for 10-15 minutes and bake it. The egg is lifting-off like a cake and the cheese is melting. Serve with ruccola or other salads. This omelette similar to pizza, however does not contain any flour and you can prepare it more fast and easily. You may vary with green pepper and olive as well.
