In Turkey hummus is usually served as an appetizer or meze. Turkish hummus usually calls much more tahini than most Greek or Middle Eastern versions. As you wish Turkish hummus may serve warm with bacon, dried beef or pastrima. You can buy ready to use tahini or prepare the fresh one. Preparing the own homemamde Tahini first toast the sesame in frying pan on medium heat, take care not to brown the seeds because it could be bitter if it is burned. Put the toasted sesame seeds into blender and make a puree with 2-3 tablespoon olive oil.
Cook the chikpeas or use the tin, transfer to the food processor add the tahini, lemon juice, the spices and process them until you get a very smooth paste. Stop several times add some cooking fluid or oil if needed. Some people prefer thick hummus while others like softener. Taste the flavoring add more seasoning or lemon juice if you like. On top of hummus add some olive oil, sweet paprika and shreded parsely and serve with pita bread. If you store your hummus in refrigerator before serving make it at least room temperature.
