Potato paprika (Paprikas krumpli) is a traditional Hungarian dish, full of flavour and simple. You can also prepare it without sausage for a meat free week day night as the main dish. Paprika powder is the soul of this dish, has to be a good quality sweet, not smoked one, otherwise the flavour of this dish is highly compromised.
Peel and cut into cubes the potato, chop the onion and garlic and slice the smoked sausage. Put the oil in a heavy bottom pan and fry up the sausage on medium heat then add the chopped onion, garlic, peck of salt and black pepper. Soften the onions while stirring it sometimes then add potato cubes and continue sauté. After 5-8 minutes take the pan off the heat completely and stir in the paprika powder (you always do it off heat as the paprika powder could burn easily and turn bitter). Pour in cold water just to cover the potatoes and salt it. Bring it to the boil then turn the heat to medium and simmer it for about 30-35 minutes or until the potato is cooked and gravy. Adjust seasoning if needed.
