Creamy spinach pottage

  • 5 Cup spinach
  • 3 Piece garlic cloves
  • 1 Decilitre (dl) milk
  • 1 Piece roll
  • 1 Table spoon (tbsp) sour cream
  • 1 Table spoon (tbsp) oil
  • 1 Tea spoon (tsp) salt

Creamy, garlic flavored spinach pottage best to serve hot with sunny side up eggs. It's a perfect healthy dish for dinner, if you do not have so much time but want to eat something warm, let's make it quickly. Heat oil in large pot over medium heat. Add chopped garlic and salt and cook 2 to 3 minutes, or until garlic softened. Add the washed and drained spinach leaves and continue steaming for 2-3 minutes than add 2 cups water and bring to boil. Reduce heat to medium-low, than cover and simmer 10 minutes, or until spinach are tender.
While the spinach is cooking slice the roll and macerate with milk, set aside. This roll gives the creamy texture to the spinach pottage. Once the spinach is cooked, remove from heat, add the rolls and purée in the pot using an immersion blender. Return the pottage to the heat, bring to boil and cook for 2 minutes. Serve in bowls of soup topped with dollops of sour cream.
