Scrambled eggs like most comfort foods, it’s not fancy but it doesn’t require a lot of time. It’s not dressed up with special condiments only hot or sweet paprika. Chop the onion and smoked ham into small cubes, heat the oil in a skillet and toast them with a peck of salt until golden brown. Whisk the eggs and pour into skillet. Cook and stir until the eggs are completely set. Half the rolls, toast if you like and place the scrambled eggs, strew the top with sweet or hot paprika powder. Serve hot immediately, you may garnish with cucumber or tomato slices.
