A simple way to enjoy some of your wild garlic (ramsons) harvest is to make a seasonal mashed potato. Be careful and don't mix this herb with poisonous lily!!! Most safety way buying in stores the ramsons. Peel the potatoes and cut into cubes, cook until soft in salted water. Drain it and add beck 1-2 tablespoon cooking juice. Add the butter and washed, chopped ramsons. Salt with a peck of salt and add sour cream if you like. Using a hand blender mash it. Serve hot with boiled ham or schnitzel. Optionally strew the top of mashed potatoes with grated Grana padano or different kind of cheese, if you like.
